Monostearin Characteristic:

Content of 90%(more than) monoglycerides for white powder or small cylindrical solid. It is made from refined hydrogenated palm oil and top glyceride by multi-stage moleculardistillation. Monoglycerides are insoluble in water but soluble in alcohol, benzene and acetone. It can self- emulsify with hot water after strong oscillation to form stable hydrated dispersion. HLB values of 90% (or more) monoglycerides were 3.9-5.3. It is a multi-purpose emulsifier and an internationally recognized safe food additive with unlimited dosage in FDA.
